Ginger, Ground
Ginger root that has been dried and finely ground. Used in baking (can’t be a ginger snap without it) and molasses cookies as well as Asian cuisine. Dried ginger is very potent so use about 1/6 the amount as fresh ginger. Originated in S.E. Asia, but now grown in E. Africa and the Caribbean.
